April 2025: Better than Never
France: Mieux vaut tard que jamais. = Better late than never.
If I were to have a life motto, this would be it.
Some people have an easy time of starting a career... meeting their soulmate... growing into their personality. I am not one of those people. It took me years (and two degrees) to gain entry to my desired career field. I married at 43 (fortunately, well -- still love that guy!). It took decades to work through my native shyness, but I can finally enter a room of strangers and not wish to be swallowed up by the floor.
Even my uber-supportive parents sometimes questioned my dedication to a particular path, wondering if just maybe - perhaps - I might consider that what I was working towards might never happen? The short answer is yes, I did consider it. Many times. But call it naivete or call it stubbornness, I kept going, like the world's slowest turtle.
I have been planning / exploring / sketching out the idea of creating a digital course that teaches people how to identify and claim their unclaimed property for, oh, years. I have: completed many outlines; taken multiple online courses to learn how to, yes, create an online course; and hired experts (I have three on my current roster) to instruct me on the various platforms involved. My dollar expenditure is in the thousands... but that is not the point here.
The long-awaited day has arrived! I've just put the finishing touches on my mini-course called "Lost Assets Found"! Thank you to all those who have supported me and helped birth this baby over these many months. The completion of this project has emboldened me to do more: I'll announce in a future newsletter what New Project has risen to the top of my list!
A Short Story of Unclaimed Assets
As a direct feed off the first article in this newsletter, allow me to briefly touch upon one of my favorite topics: Unclaimed Assets.
Gather around, children, and listen to this story...
There once was a small utility refund. Or abandoned savings account. Or uncashed paycheck. [Stay with me here.] The holder company tried to contact the owner of the funds. Poor, unclaimed funds -- no one expressed interest. After several years, the holder company gave up on finding the owner and sent the funds to the state where the owner was last known to live. The funds were given an impersonal number (called a property ID) and banished to a cold, government bank account.
And there the funds sit.
Unloved, forgotten... that is, until now!!! [Cue dramatic music.]

Ceviche, Panamanian-style
This month, I boldly enter the highly-controversial arena for the dish known as ceviche. In which Latin American country was it founded?? Which national version is "the best"?? What are the essential ingredients for a true ceviche??
I will address none of these questions. What I will do is share a recipe from the largely-unknown U.S. Embassy Panama cookbook named "Buen Provecho." As one of the editors of this 2002 volume while assigned to the embassy (yet another collateral duty performed in my off-hours), I keep a copy among our small collection of cookbooks at home. Excerpted from that cookbook is this corvina ceviche recipe -- just one of many easy and delicious ceviche recipes you will find online.

Know that ceviche is "cooked" not with heat but with the acid in lemon juice. Ceviche can be served with those little corn cups used for appetizers or with plaintain chips, but ALWAYS with a tiny ceviche fork in a margarita glass. Eddie and I have a short trip to Panama coming up this month, and in my four days there, I expect to order ceviche 2-3x!
